Surmai Kalwan is a spicy, flavorful curry made with a coconut-based masala and Malvani spices.
Ingredients:
Surmai fish slices
Grated coconut
Onions, garlic, ginger
Malvani masala
Kokum or tamarind
Oil, turmeric, red chili powder, salt
Instructions:
Roast and grind coconut with onions for masala
Cook the masala till oil separates
Add Malvani masala, then fish slices
Simmer gently until fish is cooked
Add kokum for tang
Best with steamed rice or rice bhakri
Pair with Solkadhi for an authentic coastal touch

Don’t stir too much after adding fish—it may break
Let the curry rest 10–15 min before serving for better flavor
